Gil's Leche Flan
6 egg yolks
3/4 cup of sugar
1 can of condensed milk
1 can of evaporated milk
1 teaspoon of vanilla
Pinch of salt
1/2 tsp. of lemon zest (optional)
1. Caramelize sugar with 3 tbsps. of water in a non-stick pot then pour into the mold (llanera). Coat the sides and set aside.
2. In a bowl, gently mix together the egg, condensed milk, evaporated milk, vanilla and pinch of salt.
3. Pour the mixture in the prepared mold, cover with foil and steam for 45 minutes.
4. After 45 minutes, poke with toothpick and if it comes out clean, the flan is done.
5. Let the flan cool for about 15-30 minutes. If the flan is sticking around the sides, run a knife to loosen it.
6. Invert mold on top of a plate and enjoy!
